做法:春(chūn )笋切成片(piàn )后加少(shǎo )许盐捞出后(hòu )用清水浸泡(pào ),生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少(shǎo )量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖(gài )焖(mèn )。
