做(zuò )法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸(jìn )泡(pào ),生(shēng )姜(jiāng )切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干(gàn )的时候加入盐(yán ),翻(fān )炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
